Miso (en:Soybean paste)
Miso’s main ingredient is soybeans. Miso is thick, salty paste produced by fermenting soybeans with salt and rice and barley fungi.
The one of characteristic is completely different taste in East Japan, and Central Japan, and West Japan.
Now miso is one of the representative Japanese condiments, along with soy sauce.
